Ingredients
- 450 g Northern Ireland Farm Quality Assured
- Lean lamb mince
- 1 Carrot
- 25 g Mushrooms
- 1 Tomato
- 1 x 15 ml (1 tbsp) Reduced sugar and salt tomato ketchup
- 1 Egg
- 2 x 15 ml (2 tbsp) Fresh parsley

Method
- Pre-heat the grill.
- Soak the wooden skewers in water.
Prepare the vegetables:
- Remove the top and bottom from the carrot, peel and grate;
- Thinly slice the mushrooms;
- Finely chop the tomato;
- Finely chop the parsley.
Method
- Break the egg into a small mixing bowl and beat.
- Place the lamb mince in a large mixing bowl and add the carrot, mushrooms, tomato and tomato ketchup. Mix well.
- Add the beaten egg and mix well.
- Divide the mixture into equal portions and mould around the skewers. Remember to wash your hands thoroughly after handling raw meat.
- Place the skewers onto a baking tray and grill for 10 – 12 minutes until the juices run clear, turning occasionally.
- Garnish with the chopped parsley and serve with crunchy crudités and a selection of dips.
