Ingredients
- 225 g Northern Ireland Farm Quality Assured lean rump or sirloin steak
- 1 Onion
- 1 Courgette
- 150 g Cherry tomatoes
- 2 x 5 ml (2 tsp) Oil
- 2 x 15 ml (2 tbsp) Tikka curry paste
- 300 ml Passata or 1 x 400g can chopped tomatoes
- 2 x 15 ml (2 tbsp) Greek yoghurt

Method
- Peel and thinly slice the onion.
- Cut off the top and bottom of the courgette and cut into dice.
- Halve the cherry tomatoes.
- On a separate chopping board cut the steaks into small chunks. Remember to wash your hands thoroughly after handling raw meat.
- Heat the oil in the wok, add the beef and curry paste and cook for 3-4 minutes.
- Add the onion and courgette and cook for 3-4 minutes. Stir well.
- Add the passata or chopped tomatoes and stir well. Cook for 3-4 minutes.
- Add the Greek yogurt and cherry tomatoes and stir. Cook for 1 minute.
- Serve the curry with naan breads or poppadoms and boiled rice.
