450g Northern Ireland Farm Quality Assured

lean lamb mince

1 carrot

25g mushrooms

1 tomato

1 x 15ml (1 tbsp) reduced sugar and salt tomato ketchup

1 egg

2 x 15ml (2 tbsp) fresh parsley


Chopping board, knife, peeler, grater, small mixing bowl, fork, large mixing bowl, measuring spoons, mixing spoon, oven gloves, tongs.


  1.      Pre-heat the grill.
  2.      Soak the wooden skewers in water.
  3.      Prepare the vegetables:
  •      Remove the top and bottom from the carrot, peel and grate;
  •      Thinly slice the mushrooms;
  •      Finely chop the tomato;
  •      Finely chop the parsley.
  1.      Break the egg into a small mixing bowl and beat.
  2.      Place the lamb mince in a large mixing bowl and add the carrot, mushrooms, tomato and tomato ketchup.  Mix well.
  3.      Add the beaten egg and mix well.
  4.      Divide the mixture into equal portions and mould around the skewers.  Remember to wash your hands thoroughly after handling raw meat.
  5.      Place the skewers onto a baking tray and grill for 10 – 12 minutes until the juices run clear, turning occasionally.
  6.      Garnish with the chopped parsley and serve with crunchy crudités and a selection of dips.
